         Heat a tablespoon of oil in a pan, fry the chopped onions until  aside a little for decoration. Season the soup and simmer for a

          Shirley’s Mam’s Christmas Meat Loaf
          1 large onion chopped
          1 family size packet of sage & onion stuffing
          500g of pork sausage meat
          1 large egg whisked
          Salt and pepper
          Pre heat the oven to 180 degrees C. Chop the onion and put
          into a large mixing bowl suitable for the microwave. Add a
          couple of tablespoons of water and put into the microwave
          for two minutes, just to soften the onion. Remove from the
          microwave and add the sausage meat (careful, the onion will
          be hot ). When slightly cooled, mix with your hands then add
          the whole packet of stuffing and the whisked egg. Add the salt
          and pepper and again mix with your hands till everything is
          combined. If it looks a little dry add a couple of tablespoons
          of hot water.                                       My Mam always served this along with our turkey on
          When it’s all nicely mixed transfer to a loaf tin and put in the   Christmas Day and then again cold on Boxing Day with beet-
          oven for 45-55 minutes. Remove from the oven and eat either   root and chips. Marvellous!
